Get ready to savor this Tomato Basil Pasta! Not only is it delicious, but you can make it in one stock pot! Yes, you heard me correctly, one pot people! And you know what that means… easy clean-up. Win-win.
Another thing that is unique about this pasta is that it’s cooked in broth, so you don’t have a sauce that goes on top. It’s a little different, but it actually enhances the other flavors like garlic, red pepper flakes, onion, and of course, basil. 🙂
This takes about 20-25 minutes to make from start to finish. Not bad! I recommend serving the pasta with a side salad and/or some grilled chicken. It rounds out the meal and will allow you to have even more leftovers!

- 1 box spaghetti
- 28 oz can diced tomatoes
- 1 large sweet onion julienned
- 1.5 Tbs garlic minced
- 4 sprigs basil chopped
- 1 tsp oregano
- 1/4 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp pepper
- 4 cups vegetable broth
- 3 Tbs olive oil
- fresh parmesan (optional)
- Ready for this? Add everything to the pot and then drizzle the olive oil and broth on top. Stir to combine.
- Bring pasta to a boil, stirring occasionally. Once at a boil, lower to medium-low heat and cover with a lid.
- Let simmer for 15 or so minutes, stirring occasionally, until the pasta is fully cooked and the liquid has cooked down considerably.
- Serve in a bowl with fresh grated parmesan and enjoy!
