Sausage Stuffed Acorn Squash (Paleo + Whole30)

Today I’m sharing a recipe from Paleo Running Mama: Caramelized Onion, Apple and Sausage Stuffed Acorn Squash. It’s A-MAZING! Full of flavor, savory goodness, and it’s pretty darn healthy. Even if you’re not sticking to Whole30 or implementing a Paleo diet, this recipe is for you!

It’s a bit time intensive from the chopping prep, baking, stuffing, etc. but it’s worth the time and effort. What I love about it is that I get to have plenty of veggies and protein but the apples add a nice sweetness that makes you feel like you’re having a cheat meal. Score!

I’m updating the prep and cook times from what’s listed in the original recipe — partly due to the fact that I have a two-year-old running around my house like a maniac, which tends to slow things down, and also because things took a little longer to cook for us. I’m also going to up the garlic amount a bit (no surprise there).

Also, while you can buy natural, unsweetened, unflavored pork and then add spices to it, I used mild Italian sausage. I skipped the rosemary, added the thyme and some Italian herbs to give it a boost.
