Spinach and Feta Stuffed Chicken

If you’re like me, you’ve probably fallen into the trap of preparing your chicken the same way over and over and you eventually get tired of it. Well, not today folks! This Spinach and Feta Stuffed Chicken punches you in the tastebuds with creamy, cheesy, garlicky flavor. If done correctly, it’s also tender and moist and will leave you wanting more.

I’ll start off by saying that this chicken dish is so tasty everyone gobbled it down before I got a chance to take pictures of the final product! Apologies in advance for showing pictures of raw chicken (yuck!) but I wanted to at least share the photos I did get.

The nice thing about this recipe is that you can play around with the stuffing ingredient ratios and it will still taste amazing. I like to use more cream cheese, spinach, and scallions than the recipe calls for so each chicken breast can have more goodness tucked inside.

When you’re ready, get out an oven-safe skillet, a cutting board, and mixing bowl and throw on your apron. Things are about to get delicious! While you can make this dish with uncooked spinach, it’s better if you cook it just long enough to wilt, squeeze out as much water as you can, and then chop it up and toss it in the mixing bowl. You’ll also want to soften the cream cheese to make it easier to mix with the spinach, feta, and scallions.

A few other things to note: it’s helpful to use a Splatter Screen to prevent any surprise oil attacks and I’d definitely advise using Tongs over a spatula to flip the chicken. You’ll likely have to spoon the filling back into the chicken breasts post-flip, or you can set it on top before the pan goes in the oven.

When it comes to time in the oven, I’ve left my chicken in for anywhere from 5 to 15 minutes. This really depends on how thick the chicken breasts are, how much they cooked on the stove, and how accurate your oven is. If I make this dish for two people, things move a lot quicker than they do for four, so factor that in if you add or subtract the number of servings.

Speaking of servings, I love to enjoy this chicken dish with a side of sautéed zucchini and then use any leftovers in a chicken salad the next day.

Instructions
  1. Preheat your oven to 450 degrees. In a small bowl, mix the cream cheese, feta, spinach, garlic, and scallions.
  2. Cut the chicken breasts lengthwise being sure not to cut all the way through. Try to cut it as evenly as possible so the top and bottom cook evenly.
  3. Stuff the chicken with the spinach and feta mix and then heat the olive oil in an oven-proof skillet over medium heat.
  4. Once the oil is hot, carefully add the chicken breasts, cover with a splatter screen and cook 4-5 minutes per side.
  5. Transfer the skillet to the oven and bake for 5-7 minutes or until cooked through. Remember to use an oven mitt on the handle when you remove and serve the chicken! It sounds obvious, but it’s easy to forget and burn yourself.
