Hi everyone! I realize it’s been a little bit since my last post but life has been a little crazy on my end! Over the past few weeks, many things unfolded and fell into place, so it is with great joy that I announce Justin, Mosley, and I are moving back to my home state of Michigan!

In all the excitement, busyness of packing, and sorting out the details, I thought it’d be fun to give everyone an inside look into what Justin will be eating for the next few weeks while we’re apart… I introduce to you Pulled Pork for Days!

This is another easy, satisfying dish in the crock-up as it involves minimal prep and maximum flavor! The great thing about pulled pork is that you can season it anyway you’d like to fit your needs. Put BBQ sauce right in the mix or save it until the end! For this round, I chose to make the pork less tied to BBQ so we could also use it in pulled pork tostadas and on sandwiches, but we could also throw some sauce on it to enjoy a classic. Going this route also made it easier to freeze! And of course I used crock-pot liners because I like an easy clean-up process.

To make this, grab your crock-pot, a pork loin or shoulder, your favorite spices, and some sort of broth or liquid base. Toss it all together, set your crock-pot to low, and watch the magic happen. I promise your house will smell unbelievable and you can smile knowing you just made an amazing dinner with very little work at all. 🙂

Update:  to make this Whole 30 compliant, stick with a compliant chicken or beef broth instead of adding soda. You may need to purchase or make your own compliant BBQ sauce.

Instructions
  1. Rinse your pork loin and then pat dry with paper towels.
  2. Mix together all of the spices and then rub all over the pork loin.
  3. Add loin to the crock-pot along with the diced onion, broth, and soda.
  4. Cook on low for 8-10 hours and then serve with your favorite sides and sauce!
