Do you have 15 minutes? If so, you can make these Crock-Pot Fajitas! To be fair, you’ll have to wait a good six hours until they’re ready, but think of what you could do in all that time… work, play, Netflix? Our house is very familiar with the “Are you still watching?” phrase that Netflix delivers with a side of judgement… “Yes. We are, thank you very much!”
I digress.
My point is, this recipe is easy to throw together, it frees up time to do something else, and the results make it worth the wait. I also really like this one because you can adapt it however you’d like. For example, throw in things like canned corn, black beans, or even more jalapeños for an extra kick. You can eat this alone, wrapped in a warm tortilla, or even over rice! Top it all off with some fresh cilantro, salsa, and maybe even sour cream, and you’ve got a meal you can enjoy more than once!
The only thing I miss about making fajitas in a crock-pot is the pan-seared flavor. I love to sauté the peppers, onions, jalapeños, and spices in our cast-iron skillet with a little olive oil… it’s unbelievable. So I guess you have a few options:
- Make this recipe totally in the crock-pot.
- Make the chicken in the crockpot and sauté your veggies in a cast-iron skillet prior to serving.
- Scrap the crock-pot and cook it all up on the stove (minus canned tomatoes)!
Either way, this recipe makes four generous portions if you eat it stand-alone, and it’ll go further with rice or a side dish. It’s also Whole 30 compliant (so long as you stick to the main ingredients). Feel free to make a massive batch if you’d like! It should be okay in the freezer, too. - 1 lb chicken breast
- 1 large bell pepper thinly sliced in 2-3" pieces
- 1 large onion julienned
- 1 jalapeño chopped (seeded optional)
- 1 Tbs garlic minced
- 28 oz can diced tomatoes
- 3 Tbs cumin
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- 3/4 tsp sea salt
- Place chicken in crock-pot.
- Add bell peppers, onions, garlic, and jalapeño on top.
- Add spices and then top it all off with the diced tomatoes.
- Stir together, keeping chicken on the bottom of the crock-pot. Then cook on low for 6 hours, stirring occasionally.
- Shred chicken and serve with your favorite side!
