Ingredients
1
lb
chicken breast
1
large
bell pepper
thinly sliced in 2-3″ pieces
1
large
onion
julienned
1
jalapeño
chopped (seeded optional)
1
Tbs
garlic
minced
28
oz
can diced tomatoes
3
Tbs
cumin
1
tsp
chili powder
1/2
tsp
cayenne pepper
3/4
tsp
sea salt
Instructions
Place chicken in crock-pot.
Add bell peppers, onions, garlic, and jalapeño on top.
Add spices and then top it all off with the diced tomatoes.
Stir together, keeping chicken on the bottom of the crock-pot. Then cook on low for 6 hours, stirring occasionally.
Shred chicken and serve with your favorite side!
