One pan, full of vegetables and flavor, done in 55 minutes or less. Now I like the sound of that!

This breakfast frittata has been a frequent go-to as I can whip it up quickly and have fast, delicious breakfast for several days in a row. It’s a very flexible recipe and it’s a great way to use up veggies in your fridge. My favorite ingredients include sausage or bacon, bell peppers, onion, and spinach. I’ve also used mushrooms and even zucchini!

My personal preference is to cook the ingredients in a cast iron as it can do directly in the oven. If you don’t have a cast iron skillet, you can use medium sized an oven-safe sauté pan. Anything with tall-ish sides would help.

Make this dish Paleo or Whole30 approved by omitting cheese and milk. But, if you must have it, I recommend cream and sharp cheddar or goat cheese. It’s amazing and I’m drooling right now.

Pro tip:  be sure to spray your pan with olive oil or rub with butter before you add your eggs and veggies back in. This will speed up the cleaning process.

Instructions
  1. Preheat your oven to 375 degrees.
  2. In a medium bowl, whisk the eggs. You can add milk or cream if you’d like.
  3. In a cast iron skillet, cook your sausage or bacon on medium-high heat. Be sure to break it up into smaller pieces. Once cooked through, remove from pan and set aside.
  4. Next, leaving the sausage or bacon grease in the pan, sauté the bell pepper and onion until slightly soft and lightly browned.
  5. Add the baby spinach to the pan and sauté with the bell peppers and onion until softened.
  6. Remove all the vegetables from the pan and spray before baking. Then add the sausage or bacon and the vegetable mixture back in.
  7. Lastly, pour the whisked eggs overtop, adding cheese if you’d like.
  8. Bake for 18-20 minutes, or until the eggs are set.
  9. Remove from the oven and let sit for 5 minutes. Serve hot and enjoy!
