  1. Preheat your oven to 375 degrees.
  2. In a medium bowl, whisk the eggs. You can add milk or cream if you’d like.
  3. In a cast iron skillet, cook your sausage or bacon on medium-high heat. Be sure to break it up into smaller pieces. Once cooked through, remove from pan and set aside.
  4. Next, leaving the sausage or bacon grease in the pan, sauté the bell pepper and onion until slightly soft and lightly browned.
  5. Add the baby spinach to the pan and sauté with the bell peppers and onion until softened.
  6. Remove all the vegetables from the pan and spray before baking. Then add the sausage or bacon and the vegetable mixture back in.
  7. Lastly, pour the whisked eggs overtop, adding cheese if you’d like.
  8. Bake for 18-20 minutes, or until the eggs are set.
  9. Remove from the oven and let sit for 5 minutes. Serve hot and enjoy!
