Sure, chocolate chip is probably the most popular cookie out there but let me tell ya, these oatmeal cookies are a close second! Plus, you can convince yourself that they’re better for you because oatmeal is healthy, right?
Like any great cookie recipe, these start with a good amount of butter and sugar. Add in your eggs (protein!), vanilla, flour, and oats to bring it all together into a delicious bliss. I recently made them for my grandfather’s 99th birthday. Yep. 99!! While I’m not sure he quite heard/understood what I was saying as I presented him a large plate full of cookies, but he happily ate one anyway.
There are two key things that make this cookie recipe stand out: nutmeg and refrigerating the dough for at least an hour prior to baking.
Did I just lose you? I know, asking someone to wait a whole hour (or more) before diving into cookie dough can be torture, but I promise you, your cookies will turn out better if you can hold off. Plus, this recipe makes a good amount of cookie dough so if you spread things out, you could have freshly baked cookies everyday! There’s really not much more to say other than get out your apron, the ingredients, and get baking!
