Hands down this is one of our favorite go-to meals
especially on nights where we’re fighting the urge to order take-out. Why do we love it? Flavorful protein, check! Veggies on veggies, check! And the whole meal can be ready in 30 minutes or less. Yep, just 30 minutes! That’s a win in my book.
The ingredients pictured are Whole30 and paleo compliant. The sausage is from Trader Joe’s and is surprisingly affordable. If you’re not on whole 30, regular smoked sausage, smoked turkey sausage, or kielbasa works perfectly.
Another great thing about this dish is the flexibility in the ingredients. Leave the shrimp out if you’re not into seafood, substitute zucchini for broccoli, etc. etc. If it comes down to it, use whatever you’ve got in the fridge! The flavor of the sausage and shrimp is the “belle of the ball” so to speak and will out-flavor the veggies. On a budget? Cut out the shrimp and you have an even cheaper meal with nearly the same level of deliciousness.
This meal can be made in a regular pan but I’d definitely recommend using a cast-iron skillet if you have one. And if you don’t have one, go buy one right now. It’s $15 and it’ll change your game in the kitchen. You’re welcome!
In the end, we all have to eat and what’s better than getting a nutritious, flavorful, affordable meal in 30 minutes or less? Leave your feedback in the comments and be sure to share this recipe with your friends!
- 12 oz Aidells Chicken & Apple Sausage Cut into half-moons
- 1 lb shrimp deveined, tails removed
- 1 medium onion diced
- 1 green bell pepper diced
- 2 large zucchini chopped
- 1 garlic clove minced
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/2 tsp pepper
- 3 Tbs chicken broth optional
- 2 tsp olive oil
- In a cast-iron skillet, heat olive oil on medium-high heat. Add the chopped vegetables, garlic, and spices to the pan. Sauté, stirring often, until somewhat softened. ~7-10 minutes.
- Turn heat up to high and add in the sausage and shrimp along with the chicken broth (optional). Stir frequently until cooked through ~ 5 minutes.
- Once the shrimp is cooked through, remove from heat and serve immediately.
If you'd like to get more of that charred, skillet flavor, I recommend cooking the sausage first on medium-high heat until slightly browned. Set aside and then add back in towards the end.
This skillet meal is great over rice if you'd like to add a grain!
