Ya’ll, I came down with a raging chest cold, terrible cough, and man voice out of nowhere. Like, it’s springtime and I didn’t get sick all winter but now I sound like a chronic smoker? What the heck?! Also, I’m slightly bitter that I’m sick while completing another Whole30 because all I want right now is chocolate, jalapeño kettle chips, and noodle soup. Yep. Keeping it real over here…
On the bright side, one of the benefits to working from home is that I won’t infect my coworkers… just my family.
But for real, the nice thing about being home is that I’m close to my kitchen where I can whip up something that will trick my hungry brain into thinking I’m eating ramen anyway. Let me introduce you to this healthy, Whole30 Ramen Zoodle Soup! I added some red pepper flakes as spice tends to help with congestion and it was the perfect meal for lunch today. And probably tomorrow.
If you make zoodles a lot, I highly highly recommend the KitchenAid Spiralizer. Obviously you’d need a KitchenAid Stand Mixer to use it, which you might be thinking, “But Liz! They are like $300!!” To which I’ll say, “Yes but giiiiirrrrlll, you’ll use the heck out of this thing!” Breads, done. Pizza, done. Shredding chicken, yep. You can do this with a KitchenAid Stand Mixer. And don’t even get me started about how many cookies, cakes, and pastries you can make with this amazing piece of equipment. Honestly, it’ll pay for itself with all the time saved.
Okay, my rant about how you need a KitchenAid Stand Mixer is over. Back to the Ramen Zoodle Soup.
While I chose to use carrots, celery, and green onion as filler vegetables, you could probably use whatever you have on hand. Mushrooms would be great, feel free to throw in some kale if you wanna be extra good that day, and so on! I added some leftover chicken and happend to have a hardboiled egg on hand (this never happens so I was thrilled), so I tossed that in too. And voila! A healthy, Whole30 Ramen Zoodle Soup for lunch. All in all it took me maybe 15-20 minutes because I was watching Friends in the background and kept getting sidetracked, but whoever said no to Friends? Not this girl.
Alright, go get yourself some zucchini, bone broth, and other goodies and make yourself this awesome soup!
- 2 medium zucchini spiralized
- 2 green onions diced
- 1/2 cup carrots finely diced
- 1/2 cup celery diced
- 1/2 cup chicken cooked and cubed
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp red pepper flakes
- 1/4 tsp garlic powder
- 2 cups chicken bone broth
- 1 Tbs coconut aminos or soy sauce if you're not on Whole30
- 3 cups ice cold water
- 1 Tbs olive oil
- 1-2 hardboiled eggs halved lengthwise
- Add oil medium pot over medium-high heat. Let warm for a little bit and then add the carrots and celery and sauté for 2-3 minutes.
- Add the spices, coconut aminos, green onion, water and broth. Bring to a boil.
- Add the zoodles and stir to combine. Lower heat, cover, and let simmer for about 10 minutes.
- Throw your chicken in towards the end of the 10 minutes so it’s warmed but not overcooked. Remove from heat and serve with a hardboiled egg.
