A delicious meal that will last for days and involves a 30 second cleanup? Where do I sign?!
You guys, this crock-pot chicken recipe is amazing as it lives up to my requirements: affordable, easy, delicious, and contains garlic.
The downside: you do have to touch raw chicken, BUT, I always try to stay positive and offer solutions to problems. In this case, my solution is wear gloves or lovingly ask your spouse to do the gross part! :/
To start off, pick up a whole bird at your local grocery store. Make sure you have crock-pot liners on hand, too, or I can’t promise that 30 second clean-up. You can also grab some of your favorite root vegetables. We like to use a cup or two of baby carrots and two-three medium potatoes cut into large cubes. We did try sweet potatoes once, which were delicious, but ended up a little mushy.
Once you’re ready, bust out the crock-pot, add the liner and veggies, then brace yourself for the chicken prep. Like with my Buffalo Chicken Dip, I use my 6-Quart Programmable Crock-Pot because I can set it and go. Scrub that sucker in the sink with cold water (and bleach on standby!) and remove the giblets (that word makes me cringe) and gross stuff inside. Carefully maneuver the chicken from the sink to the crock-pot and place breast-side-up on top of the veggies.
Follow the recipe below for the spices, fresh herbs, and garlic garlic garlic! Head out for the day and come home to a tasty chicken dinner waiting for you. I love to use my leftovers in chicken salads, wraps, or even in some pasta!
- 5-6 lb whole chicken washing with giblets removed
- 2-3 medium potatoes of your choice cubed
- 1-2 cups baby carrots
- 1-2 Tbs garlic minced
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp dried rosemary
- 1/2 tsp onion powder
- 1 tsp sea salt
- Get out your crockpot, liners, and veggies. Line the bottom of your crockpot with selected root vegetables.
- Grab your gloves or your spouse to wash the chicken with cold water.
- Stuff the garlic and sprigs of thyme inside the chicken.
- Place your chicken breast-side-up in the crockpot. Combine your seasonings in a small bowl and then sprinkle on top of the chicken, covering it completely.
- Place the lid on and cook on low for 7-8 hours.
- This last step is optional, but if you want to crisp the skin a little bit, place your cooked chicken in an oven safe pan and broil for 3-5 minutes or until lightly browned.
- Remove from oven and serve with vegetables.
