Get out your crockpot, liners, and veggies. Line the bottom of your crockpot with selected root vegetables.
Grab your gloves or your spouse to wash the chicken with cold water.
Stuff the garlic and sprigs of thyme inside the chicken.
Place your chicken breast-side-up in the crockpot. Combine your seasonings in a small bowl and then sprinkle on top of the chicken, covering it completely.
Place the lid on and cook on low for 7-8 hours.
This last step is optional, but if you want to crisp the skin a little bit, place your cooked chicken in an oven safe pan and broil for 3-5 minutes or until lightly browned.
Remove from oven and serve with vegetables.
