As I was meal planning on Sunday, I came across this trusty recipe, which I hadn’t made in a while but then instantly had a craving for them. The combination of fresh avocado and cilantro along with a warm, grilled tortilla is too good to resist! I drove over to Fred Meyer and headed right for the produce section… Avocados were 4 for $5. Not bad!
One of the things I love about this recipe is that it has so many veggies but is still super filling and hits the spot every time. It’s also very easy to make as it requires chopping up the ingredients, sautéing the goodies, and then assembling your quesadilla. I’m writing while I sip on my morning coffee and I’m actually considering a quesadilla breakfast! Lol
This recipe, like most of Basil Belle’s, are easily scalable for larger groups. One quesadilla usually takes care of me but Justin will eat 1-2 depending on the day, so keep that in mind if you have hungry people around you! I should also mention that while grilling the tortillas gives it a slightly different flavor, you can “grill” them on the stove in a pan as well. Just be sure to spray the pan beforehand and keep the heat around medium so the tortilla doesn’t burn.
Once you assemble your quesadilla, top it off with fresh salsa and sour cream, although you may not even need it! Make this dish year round and enjoy all the smiles and “Mmms!” from your dining guests.

- 16 oz can black olives sliced
- 3 avocados diced
- 1/2 bell pepper of your choice chopped
- 1 jalapeño seeded, chopped (optional)
- 2 Tbs red onion chopped
- 1 tsp olive oil
- 1/3 c cilantro chopped
- 1 tsp lime juice
- salt and pepper to taste
- 4 large tortillas
- shredded cheddar cheese
- Heat olive oil in a small pan on medium heat and add in the bell peppers, jalapeño, and onion.
- Stir all the vegetables together in a bowl and add the lime juice as well as salt and pepper as needed.
- Fire up the grill or pan on medium heat. Place the tortillas on the grill for about 30-45 seconds until golden brown. If you're using a pan, be sure to spray it with cooking spray beforehand.
- Flip the tortillas and cover with cheese. Grill until melted and remove from heat. You can add the quesadilla ingredients now if you'd like.
- Divide avocado mixture among the tortillas, cut into wedges, and serve immediately. Feel free to top these off with fresh salsa and sour cream!
