Avocado Quesadillas
The combination of fresh avocado and cilantro along with a warm, grilled tortilla is too good to resist!

  1. Heat olive oil in a small pan on medium heat and add in the bell peppers, jalapeño, and onion.
  2. Stir all the vegetables together in a bowl and add the lime juice as well as salt and pepper as needed.
  3. Fire up the grill or pan on medium heat. Place the tortillas on the grill for about 30-45 seconds until golden brown. If you’re using a pan, be sure to spray it with cooking spray beforehand.
  4. Flip the tortillas and cover with cheese. Grill until melted and remove from heat. You can add the quesadilla ingredients now if you’d like.
  5. Divide avocado mixture among the tortillas, cut into wedges, and serve immediately. Feel free to top these off with fresh salsa and sour cream!
