Simple and delicious, this Tortellini Soup is filling and full of flavor! While most soups are always welcome on cold days, this is one you might consider on a warmer day as well as it’s packed with iron and veggie flavor. Plus, there are only four ingredients, including water, so it’s pretty affordable, too. Lastly, this is a ‘throw it all in one pot’ recipe, so it really couldn’t get any easier to make!
For a healthier alternative, opt for regular spinach instead of creamed. Or you could just add fresh spinach on top of the frozen creamed spinach. However you prefer to prep this is soup is fine. I also like to add more water if trying to stretch the number of servings a bit. Need some protein? Try adding in some grilled chicken and enjoy. 🙂
- 5 cups water
- 1 package knorr vegetable recipe mix
- 32 oz cheese tortellini
- 20 oz frozen creamed spinach
- Add all ingredients to a large pot and bring to a boil.
- Reduce heat to medium and stir occasionally until spinach and tortellini are cooked through.
