Have you ever noticed that many coffee cakes are full of cinnamon with crumbly tops, and a sweet flavor? But, very few actually have a coffee flavor to them? If you’re a coffee lover, step right up! This coffee cake is easy to make, serves a good amount of people, and will keep you coming back for more. One of the things I really like about it is that it’s even better the next day after you pop it in the microwave for a few seconds. It doesn’t dry out, so that’s a win in my book.
The first time I made this I took the fast route on the crumbly topping. I threw the ingredients into my Ninja Food Processor until combined and semi-course, and then I spread it evenly on top of the batter in the pan. In the future I think I’ll take the time and mix the butter, sugar, etc. by hand so it’s less finely mixed. Then I would spread it out on top of the batter in thicker clumps rather than as an even layer as you see pictured. I think this would offer more of a crackle book and a bit more substance in the bite.
I would also recommend adding a little cinnamon sugar swirl throughout the batter after it’s poured into the pan. This would add a little extra flavor and it would also look pretty! Hey, you bake and you learn. I plan to make this again soon and incorporate some different approaches. I’ll let you know how it pans out! Pun is completely intended…
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 stick butter softened
- 1 tsp vanilla
- 1 tsp coffee extracts
- 1 cup sour cream
- 1/4 cup brewed coffee
- 1/2 stick butter cold and cut into 1/4" pieces
- 3/4 cup flour
- 2/3 cup brown sugar
- 2 Tbs ground coffee
- 1/2 tsp cinnamon
- 1/2 tsp salt
- Preheat oven to 350 degrees and grease a 9x13 baking dish.
- For the cake mix, mix flour with baking powder, baking soda and salt. In a separate bowl, beat the softened butter and sugar until light and fluffy.
- Beat in eggs, vanilla, and coffee extracts and mix until combined.
- Beat in the flour mixture on low speed, alternating with the sour cream and brewed coffee. Pour the cake mixture into the baking dish.
- To make the topping, combine the butter, flour, brown sugar, ground coffee, cinnamon, and salt until clumpy. Sprinkle over the batter.
- Bake for 45 minutes or until a toothpick comes out clean.
