In honor of Halloween, today’s featured recipe is these addictive Butterscotch Blondie bars. The sweetness, the crunch, the thick, dense bite is absolutely everything. While I’ll eat candy if it is around, cookies and brownies are my favorite dessert to consume. Nothing will beat the traditional gooey chocolate brownie but these blondies are a great alternative for when you’re looking to switch it up.
To start off, I want to emphasize that I’ve experienced various bake times when making this recipe. I bake them in a 9×13 glass Pyrex dish and they turn out perfectly. On average, they take about 45-50 minutes but I’ve also pulled them out at 40 and they’ve been perfect. Perhaps my oven is just inconsistent, but you’ll want to check them around the 35 minute mark to see if there’s still some wiggle and jiggle in the middle. If so, keep them going another 10 minutes and then check them again.

These are pretty dense so I recommend cutting them into smaller pieces. They store well in an airtight container but the pretzels will start to get a tad soft after a day or two. I only make these for parties or if I’m fully committed to sending the leftovers to work with my husband or I’d eat the entire pan and be sick! Word to the wise, sharing is caring folks.

Preheat oven to 350 degrees and grease a 9x13 baking dish.
Heat butter in the microwave until it's nearly melted (30 seconds or so). Pour into a large bowl and let cool for a minute or two.
Whisk in the brown sugar, eggs, and vanilla. In another bowl, mix the flour, baking soda, and salt and then add the flour mixture to the sugar mixture.
Mix in the butterscotch caramel sauce and then gently fold in the butterscotch chips.
Pour mixture into a baking pan and sprinkle the broken pretzels overtop. Bake for about 45 minutes, checking for doneness around the 35 minute mark. The center should be set and a toothpick should come out clean.
