Basil Belle
If you like our Tomato Basil Sauce, you’re going to love this flavorful, fresh Tomato Basil Chicken dish. I recently made this for family members in town and it was a huge hit. You can easily eat this alone or served over pasta, or try zucchini noodles if you’re looking for a lighter option.
To begin, make sure you have fresh basil and tomatoes on hand as that makes a big difference. If you have a cast-iron skillet, I’d encourage you to use that over a traditional pan.
Ingredients:
1lb chicken breast, fat trimmed, pounded to ¾” thick
2 Tbs olive oil
2 tsp minced garlic
½ tsp oregano
2 cups chopped tomatoes
3 Tbs cold butter
½ cup fresh basil, chopped into ribbons
Salt & pepper to taste
Roll up your sleeves:
- Season chicken breast on both sides with salt, pepper, and oregano.
- In a large pan, heat olive oil on med-high heat. Once hot, add the chicken breasts to the pan. Turn after 4 minutes and then cook for another 4 minutes or until slightly browned.
- Add fresh tomatoes, basil, cold butter, and minced garlic. Stir frequently for 2-3 minutes but try to keep tomatoes from going under the chicken breast or you could lose some caramelization.
- At this point, the liquid from the tomatoes will turn to steam and cook the chicken quickly, so check for doneness and then remove chicken from pan.
- Cut chicken breaks in half and plate with the tomato mix served over top.
As I mentioned earlier, you can eat this with your favorite side dish or serve over pasta. I love to pair this meal with a side of Roasted Broccoli. Serves 2.
