Basil Belle
Lick your lips and never say no to broccoli again! I’ll start off by saying I used to have a friend that hated broccoli and now this is the only way she’ll eat it. This recipe is another fan-favorite that earns it’s keep as it also goes in my Roasted Broccoli Cheddar Soup. That’s right… Panera bread cornered the market on this soup, but you may just want to give this recipe a try.
Anyway, back to the broccoli… I’ll warn you now, your house will smell like garlic but boy oh boy is it worth it for this soft yet crispy dish.
Ingredients:
3-4 large broccoli crowns, rinsed and cut into small pieces
4 Tbs olive oil
2 tsp minced garlic
Salt and pepper to taste
Roll up your sleeves:
- Preheat the oven to 375 degrees. Drizzle 1 Tbs olive oil over a large baking pan and then add the broccoli along with salt and pepper.
- Add the remaining 3 Tbs olive oil and toss broccoli together until it’s mixed in.
- Spread broccoli across the pan and then sprinkle the minced garlic overtop.
- Roast the broccoli in the middle of the oven for 12-15 minutes and then stir/flip.
- Roast the broccoli for another 12-15 minutes and then remove from oven.
- Serve and enjoy.
This recipe serves 4.
I highly recommend this dish as I have had the good fortune of eating it after Liz prepared it. Since then I have cooked it as described and it came out great. This opinion is completely unbiased and neutral despite the fact she is my daughter!
